The Ebro FOM330 is widely used across the hospitality and food service sectors, the demand for accurate, rapid results and ease of operation is very capably fulfilled.
The monitor provides an accurate control of oil usage influencing continuity in texture, taste, and appearance of finished product whilst avoiding significant health issues arising from over-use of oil.
Polar compounds, now accepted as a reliable measurement of ageing oils, are assessed by the FOM330 oil monitor and displayed in digital results from zero to fifty.
Along with all the design development carried forward from previous models, this instrument features:
- Auto 'Hold'-release function - the instrument automatically releases the Hold function when it senses that it has been returned to hot oil. This eliminates the possibility of the operator transferring frozen readings from vat to vat.
- Increased digit size in display for greater visibility.
- Large oil quality signal lamp on top of the instrument gives a bright unmistakable indication of when oil is to be changed.

Yes your FOM330 does record temperature. This is a useful way to tell if your cooker is working in line with its temperature measurements.
Whilst it is recognised the older your oil is, the higher the levels of TPC and acrylamide levels are, there has been no scientific evidence to show a direct correlation between the two levels. Find out more about reducing the risks of acrylamide

Dark oil isn’t always an indicator of poor quality. Certain foods like battered fish or breaded chicken can darken oil quicker, often leading to premature oil changes. However, as long as you’re filtering your oil daily, dark oil can remain safe for cooking without impacting food quality for a longer duration than you may think!
Yes - even simple filtering, like passing cold oil through a net or strainer and pouring it back into the fryer each morning, can greatly extend oil life. Filtering improves the effectiveness of your FOM330 and helps you get the most out of your oil without compromising food quality.
The ideal testing range is between 150°C and 180°C for the most accurate results.
This reading reflects the oil’s Total Polar Material (TPM), essentially a quality gauge. The preset levels on your monitor guide you on when the oil should be changed, with the light indicators (Red, Amber, Green) providing clear prompts.
